Mutton Curry

Ingredients

  1. Mutton  - 500 gms
  2. Onions – 2 nos (big size)
  3. Ginger paste – 1 tsp
  4. Garlic Paste – 1 tsp
  5. Coriander Seeds (Daniyalu ) – 1 tsp
  6. Cumin Seeds (Jeela Karra ) – 1/2 tsp
  7. Poppy Seeds (Gasa Gasalu) – 1 tsp
  8. Cloves (Lavangalu ) – 4 nos
  9. Elachi (Yalikalu ) – 3 nos
  10. Black cardamom – 1 no
  11. Cinnamon stick  - 1 inch
  12. Chili powder – 1 tsp
  13. Turmeric powder (Pasupu) – 1/2 tsp
  14. Green Chilies – 2 nos
  15. Lemon – 1/2 piece
  16. Coriander Leaves (Kothimeera ) – few
  17. Curry Leaves (Kari Vepaku ) – few
  18. Oil – 2 tbsp
  19. Salt as needed

Making Time: 1 hour (including marinating time)

Preparation
  • Cut mutton into medium size pieces and wash. Add turmeric powder (Pasupu ),  one Clove (Lavanga ), one Elachi (yalakulu ), 1/2 inch cinnamon stick, 1/2 tsp ginger paste, 1/2 tsp garlic paste, salt and lemon juice. Mix well and marinade for 20 minutes.
  • Grind onions and make as fine paste and keep aside.
  • Grind Coriander seeds (Daniyalu ), Cumin seeds(Jeela karra ), Poppy seeds (Gasa gasalu ),  two Elachi (yalikalu ), Three Cloves (Lavangalu ) , 1/2 inch cinnamon stick and black cordmom and as fine powder to make masala powder.
  • Cut chilies into long slices and keep aside.

How to make:
  • Heat oil in a pan, add green chilies and Curry Leaves (kari vepaku ) and fry for 10 secs.
  • Add onion paste and fry until brownish color (approximately 2 minutes).  
  • Add 1/2 tsp ginger paste, 1/2 tsp garlic paste and fry for 10 secs. Add chili powder and then add  .above made garam masala powder. Fry for approximately one minute in a medium flame.
  • Add marinated mutton and mix well. Cook in a medium flame for 5 minutes.
  • Add 1 cup of water and with a closed lid cook for 20 minutes in a low flame. Time to time mix the curry and make sure the water is not dried fully. If needed you can add little more water.
  • Put off the stove and add Coriander Leaves (Kothimeera).
  • Mutton curry is ready.
